Last night I made the most delectable squash soup! I made it up as I went, it’s really simple and super delicious!

recipe (vegan):

1/2 a small onion, finely chopped

1 clove of garlic, minced

1 tsp coriander seed

salt and ground black pepper to taste

2 small acorn squash

2 cups low sodium vegetable broth

6 cups water

2 Tbsp agave syrup

2 Tbsp olive oil

coconut yogurt & a few sprigs cilantro (for garnish)

Here’s what I did:

cut squash(s) in half and place them on a greased baking sheet in the oven at 350F for about 25-30 minutes, squash should be slightly squishy but not mushy. Remove squash from oven, scoop out and discard seeds and then scoop out the rest of the squash pulp into a bowl. While you are waiting for the squash to roast, chop up your onion and garlic and ready your other ingredients. 

In a medium sized pot, warm olive oil, onion, garlic, and coriander seed on medium-low heat until you can smell the aromas of the ingredients cooking. add squash and mash up large chunks. Add vegetable broth and water, agave syrup, salt and ground black pepper. Bring to a boil, reduce heat to low, cover and allow to simmer for about 25 minutes. Work in batches and transfer mixture to a blender, blend until smooth, re-heat and serve with a dollop of yogurt and a sprig of cilantro on top.

This is a delicious treat for fall!  :)
